Critical Beans IT is a small company doing a few things carefully — walking, logging, teaching. Every mission is a different way of asking the same question: how do we make coffee, and the systems around it, more fair?

Mission 01

The Coffee Pilgrimage

Completed · Testimonium received

Brussels to Rome, on foot. One thousand seven hundred kilometres of asking every barista, roaster and grower I met along the way what a fair cup should mean. The walk is done — the testimonium is on my desk — and the conversation is louder than it was in May.

This mission continues. A second, more focused pilgrimage is forming: a walk built around specific coffee origins, with a small quality lab in the boot at the finish. Sign up to the newsletter to hear the route when it lands.

Mission 02

Guesspresso

Every coffee I've truly enjoyed is logged, tasted-through, and pinned to a place — a growing map of cafés, roasters and cups worth remembering. It lives at 212coffees.be.

The point isn't reviews. It's a data layer for taste — geolocalised tastings from anyone who cares to add one, so patterns and outliers become visible. Where are the honest cups? Which roasters buy direct? What tastes different in Palermo than in Ghent? Guesspresso is the ongoing answer.

Two disciplines. One habit: share what you know, cleanly, and without hiding behind jargon.

Coffee workshops
